WHere is a simplified interpretation of a drink featured on a new menu. It's a batch pre-mixed which is packed with tastes of the Christmas time, which makes it ideal for your holiday party. Reserve the remaining citrus syrup you can use for morning drinks, puddings, or for another batch of the drink.
The Bikini Cocktail
Yields 10 guests
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Drink (makes 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Syrup: Put every items into a saucepan, bring to a gentle boil, agitating so the sugar melts. After that, turn off the stove allowing it to cool fully. Transfer into an sealable bottle, cap it and store in the fridge, it will last for up to a month.
For the Batch Mix: Combine all the liquids into a sizeable container, let it rest for 60 minutes, then filter it , ideally through cheesecloth, to ensure it's fully clarified.
When ready to serve: Measure 85ml of the cocktail base to a cocktail shaker packed with ice, and stir gently for a minute to cool it down. Strain into a frosted cocktail glass or equivalent, decorate with a few cranberries adding the final touch by giving it a quick spritz of mandarin oil above the glass.
